3 Easy Lunch Ideas for Back-to-School

Check out these easy meal ideas for adults or kids lunches!

Bento Boxes

These will give you a balanced meal without all the prep work. You simply plug and play ingredients with different food groups! Get creative and have fun with it. Choose from each category to build your box:

  • Choose protein: chicken salad (made w/ greek yogurt/light mayo), low-sodium deli turkey, low-fat cheese, hardboiled eggs, Greek yogurt

  • Choose a veggie: carrots, broccoli, sliced bell peppers, cauliflower

  • Choose a fruit: strawberries, grapes, pineapple, blueberries, raspberries

  • Choose a fat: low-fat ranch , peanut butter, nut/seed mix, hummus, avocado/guacamole

  • Choose a grain: whole-grain crackers, whole-grain bread (to make a sandwich from options above), tortilla

Turkey and Cheese Rollup

  • 1 whole-grain tortilla (I love xtreme wellness wraps for extra fiber)

  • 2-3 slices low-sodium deli turkey

  • 1 slice swiss cheese

  • 1 tbsp light mayo or Dijon mustard

  • handful of spinach

Roll it up in tin foil. Pair with fruit, ready-to-eat veggies and a Greek yogurt (I love Dannon light & fit).

Chicken & Cheese Quesadilla

  • 1 whole-grain tortilla

  • 2-3 ounces canned shredded chicken, drained

  • 3 tbsp Mexican shredded cheese

Put ingredients on one side of tortilla. Fold in half. Microwave ~30 seconds. Store in fridge overnight. Pack for lunch paired with salsa, pineapple, and sliced bell peppers. Re-heat quesadilla in microwave just before eating for ~30 to 45 seconds. Enjoy!
