Creamy Overnight Oats

Oats are one of my favorite breakfast foods! They’re easy to keep in your pantry and can be prepared so many different ways with a variety of flavors and ingredients. These can be eaten chilled or hot.

Ingredients:

1/2 cup whole-grain oats

1/2 cup milk of choice (cow’s, unsweetened almond, soy or coconut)

1/2 cup Greek yogurt, plain

1 teaspoon chia seeds

1 teaspoon 100% maple syrup or honey

1/4-1/2 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1-2 Tablespoons peanut butter

Directions:

  1. In a jar or container with lid, add all of the ingredients together. Mix together thoroughly until well combined. *Note: don’t worry if it looks like too much liquid, this will soak up to make the oats soft and creamy!

  2. Refrigerate overnight or at least 4 hours.

  3. Serve chilled right from the fridge or heat it up. Heat in microwave for 30 seconds at a time until warm. Stir in between 30 second intervals.

Favorite toppings:

Blueberries, strawberries, shredded coconut, peaches, chocolate chips (you can do anything to make your favorite flavor combos!)
