How to Eat More Veggies

Getting enough veggies in our diet can be challenging, but it doesn’t have to be! When we are short on time, eating out, or forget to prepare ahead foods of time, it’s easy to forget to add those vegetables to our meal.

Vegetables are fiber-rich and nutrient-dense so we NEED them in our diet. Adults should aim for 3-4 servings of vegetables per day. If that sounds “impossible” for you right now, just start with increasing your veggie intake a little from what you’re currently doing.

Try these tips to BUMP UP your Veggie servings:

  • Stock up on freezer/canned veggies so you always have some available when you run out of fresh

  • Set a goal to fill 1/4-1/2 of your lunch and/or dinner plate with non-starchy veggies (leafy greens, broccoli, peppers, carrots, etc - check out a whole list here)

  • Try ready-to-eat veggies for a mid-afternoon snack with a delicious dip

  • Swap out chips/fries for a veggie side dish
